1 cup white northern beans (rinsed, soaked, pressure-cooked and pureed)3 eggs3 tbsp canola oil10 tbsp sugar (0.66 cups) + 1 tbsp molasses1/2 cup unsweetened cocoa powder + 2 tbsp instant coffee (dissolved in 1 tsp water)1/2 cup chocolate chips1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1 tsp vanilla extract1/2 cup All Purpose Flour + 4 tbsp Almond Meal1/2 cup Zucchini grated and squeezed dry.
Method
•Preheat the oven to 350 F.
•Cream sugar, molasses and oil. Add eggs and beat. To this add bean puree, coffee decoction, vanilla extract and grated zucchini and mix.
•Mix all dry ingredients together: APF + Almond Meal + cocoa + baking powder + baking soda + salt.
•Alternatingly add dry ingredient to the wet, gently mixing the two.
•Stir in chocolate chips in the end to make sure they don't break.
•Pour in a 8" X 8" baking container and bake for 30-35 min.
