Ingredients
1 package ground sausage3/4 cup chopped onions1/4 cup chopped bell peppers1 large tomato4 eggs
Directions
sautee chopped onions & peppers
Add sausage, cook til brown, add chopped tomatoes, stir & add eggs. Stir until all ingredients are covered with egg. Once eggs are cooked it its done. Serve on whole wheat tortillas, topp w/ cheese (tortillas & cheese not included in nutritional info)

    This recipe could be prepared with less fat, I have made this with salsa and a small amount of kraft mexican blend shredded cheese. Yum! - 6/13/11

    of course it can. I made it with what I had. More (and different) veggies can be added, egg whites or egg substitute can replace the eggs, and low fat or fat free cheese can be used. As well as adding salsa or anything else. I have a 4yo & 19mo so have to make what I can to help them eat healthier.
