Beet Salad with walnuts and lime juice

Ingredients
beets (roasted 1 hr at 375 F)3 cloves garlic, minced1/4 C red onion, diced1 C walnuts, crushed or choppedjuice of 1 lime1 tsp chile powdersalt & pepper to taste
Directions
peel and shred beets, mix with remaining ingredients
serve chilled
Optional: add mayonnaise to taste for a creamier, more traditional salad
