colourful mixed salad

2 tomatoes (medium)2 red peppers(small)onion(1,medium)3 small cucumbers,peeledfresh green salad leaves (about half a salad)oil and vinegar dressing:5 tsp olive oil, vinegar to taste(about half a cup, doubled with water)a little grated cheese, for example parmesan (5 tbsp at most)
Chop all ingredients, add the oil and vinegar, sprinkle with cheese....mix all and enjoy!
I don't add salt because of the cheese or Parmesan, but you can if you want to !
Goes great with grilled meat, or alone, it's enough!
