Green Zucchini Salad

Ingredients
Romaine LettuceBaby SpinachTomatoCucumberZucchiniMushroomsBlack beans, cannedCorn, small canLong Grain & Wild Rice (Uncle Ben's Microwave Bag)Cheddar Cheese, shreddedHard boiled egg (2)GuacomoleRanch Dressing
Directions
The only cooking is to sautee' the zucchini and the mushrooms for a few minutes (I used butter substitute) just until softened. Chop/dice/rice the other ingredients as desired and mix together. WONDERFUL salad for a hot summer day! My husband and Iove this for dinner.
