Spinach Salad With Apple Vinaigrette

1 bag fresh baby spinach, about 6 ounces¼ cup Splenda¼ cup apple cider vinegar¼ teaspoon dry mustard¼ teaspoon salt1 tablespoons EVOO½ cup thinly sliced red onion1 small apple, sliced julienneCrumbled cooked bacon, for garnish, if desired (not included in Nutritional Info)
1. Wash spinach and let dry.
2. Whisk together Splenda, vinegar, mustard, salt, and EVOO.
3. Toss the apple and red onion with the dressing.
4. Refrigerate spinach/apple/onion and dressing separately until serving time.
5. Pour dressing over spinach just before serving and toss.
6. If desired, sprinkle with crumbled bacon.
