Slow-Cooker Vegetarian Split Pea Soup

Ingredients
6 cups water1 cup of chopped celery (120 g)1 cup dried green split peas (200 g), rinsed and picked over1/2 cup diced shallots (65 g)6 2-inch red-skinned potatoes, chopped (370 g)2 tsp. salt (or to taste)1/4 tsp. ground black pepper (or to taste)1/4 tsp. liquid smoke (or to taste)1/4 tsp. lemon juice (or to taste)
Directions
Put water, celery, split peas, shallots, and potatoes in slow-cooker and cook on low for 8 hours. Carefully puree soup in small batches in a blender (or use an immersion blender). Season with salt, pepper, liquid smoke, and lemon juice to taste.
