Spiced Tofu

Ingredients
1 block tofu, 1 tbsp paprika, 1 tsp ground cumin, 1 tsp ground corriander, 1/2 tsp salt, pepper to taste, 4 tsp honey, 2 tbsp lemon juice, 3 tbsp boiling water. 2 tsp olive oil.
Directions
drain tofu. slice into 8 pieces (about 1/2 inch thick) and blot with paper towel.
mix spices, salt and pepper in a bowl.
coat tofu slices in spice mixture.
combine honey, lemon juice and boiling water and mix to dissolve, set aside.
heat oil in large skillet over medium high heat. Add tofu and cook on one side until crusty and brown (about 5 mins) then flip to other side and cook another 5 mins. Add liquid mixture and shake pan to coat tofu. Cook until most of liquid is evaporated (this is very quick!)
Optional: sprinkle with pine nuts.
I like to serve mine over fresh sliced bell peppers and julienned carrots.
