broccoli soup Low Fat, low carb

Ingredients
2 cups chicken broth (use low sodium broth if you need)1 1/2 cups diced raw broccoli (stalks are fine - use the florets for salad or something where it matters)1 Tablespoon minced raw onion1/2 cup Daisy 2% cottage cheese1/2 cup Kraft 2% shredded SHARP cheddar cheese
Directions
In a small sauce pan, add chicken broth, broccoli, and onion. Bring to a boil. Boil uncovered until the broccoli is dull green (and the broth is reduced by 1/4 or so).

Let cool a bit. In a blender, add the mixture from the sauce pan, puree until smooth. Add the cottage cheese. Blend until smooth. Add the cheddar cheese. Blend until smooth. Serve immediately.

Makes 3 servings of 1 cup.

On the weigh station eating plan, I am guessing that each cup equals about 1 1/3 protein and 1 serving vegetables.

    I am going to try this recipe however, I am going to use fat free cottage cheese and home made soup broth and use skim milk cheese, this should cut the sodium,fat, and calories down even more. - 2/22/13
