Sweet Potato White Bean Burrito

Ingredients
Olive Oil, 1 tbsp Onions, raw, .5 cup, sliced Garlic, 4 cloves, mincedBeans, white, 2 cup or 1 16 oz can rinced well and drainedChili powder, 3 tbsp Cumin, 1 tbsp Dijon Mustard, 4 tsp cayenne, 1/4 tsp (optional)Soy Sauce, 3 tbsp Sweet potato, cooked, baked in skin, without salt, 2 medium (2" dia, 5" long, raw) Whole Wheat Trotilla, Med., 6 serving Cheddar Cheese, 1 cup, shredded
Directions
Preheat oven to 350 degrees F (175 degrees C).

Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.

Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.

(Burritos can be frozen at this time. Wrap individually and store in a freezer bag.)

Bake for 12 minutes in the preheated oven, and serve.
