Christmas Brunch Casserole

1 pound bulk pork sausage1 small onion, chopped1 cup cooked rice1.5 cups crisp rice cereal1.5 cups shredded cheddar cheese3 eggs1 can 10.75 oz condensed cream of celery soup, undiluted1/4 cup milk
In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Place in a lightly greased 9 x 9 baking dish. Layer with the rice, cereal and cheddar cheese. In a bowl, beat the eggs, soup and milk. Spread over top.
Bake uncovered at 350 degrees for about 50 minutes, or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting. Refrigerate any leftovers.
