Sweet Potato Soup

1kg of Sweet Potato, 1 Large Onion, 750ml Vegetable Stock, 450ml Soy Milk, Salt and Pepper
Place pumpkin, onion, and seasonings in saucepan with little butter sweat over low heat with lid on, stirring occasionally until onion is transparent. Add stock and bring to boil, simmer for 30minutes or until tender. Puree the mixture keeping a thick consistency. Return to saucepan, stir in milk slowly and heat through. If you like a bit of spice add a touch of Cumin powder. ENJOY!
