Vegetable curry

Ingredients
In addition to listed ingredients, I add 3 tbsp curry powder, 1 tsp. salt, 2 cloves chopped garlic, 2 tsp. chili garlic paste, and 1 tsp cumin. I mix the coconut milk, yogurt and spices first in the bottom of a crockpot and mix well. I add the veggies and stir it all together and cook it on low for about 5 hours in the crockpot. I add in the cream last and taste for spices. We eat it over rice. If you like it tomato=y, you can add a can of tomato sauce it makes for a nice flavor, but you will have to recalculate calories.
