Lemon Pesto Pasta Salad

Ingredients
1 box garden (tri-color) pasta (12 oz)2 1/2 c chopped broccoli1/8 c chopped white onion1 c snap green beans, blanchedZest and juice of 1 lemon1 T Mirin (Japanese sweet vinegar)2 T pesto4 T sour cream
Directions
Cook pasta according to the box instructions. Blanch green beans (about 5-7 minutes in boiling water). Rinse cooked pasta and green beans with cold water. Drain completely.

Whisk together lemon zest and juice, mirin, pesto, and sour cream in a large serving bowl. Add pasta, green beans, onions, broccoli. Toss until evenly coated.

Chill for at least 1 hour, but colder is better! Also, adding a bit of parmesan cheese on top is a great addition! But this is great on it's own too!
