4 Leftover Rotis (atleast one meal stale)1 Green chillies chopped (you can make it more or less spicy as per preference)1 Cup chopped tomatoes Some Curry leaves1/2 tsp Mustard seeds (black)3 Cloves of garlic1/4 tsp Turmeric Powder1 tsp Coriander powderHandful of Coriander leaves (optional)Salt as per taste1 tbsp oil1 1/2 cup or more of water
In a large frying pan, or a shallow pan, heat the oil and add the garlic, stir for less then a min, then add the mustard seeds and the curry leaves (be careful as the mustard seeds splutter)
Quickly add the tomatoes, chopped chili, salt, turmeric powder and coriander powder, till tomatoes are slightly cooked (about 5 mins)
Add the cup and a half of water (more water required the older the rotis are).
Bring mixture to a boil and tear the rotis into bite sized chunks and add to the boiling mixture.
Let it cook on medium to low flame. (If roti's are old, then cook for longer, on a low flame, with lid on).
Cook till water is dried and roti's are soft (approx 10-15 mins)
Garnish with coriander leaves and serve!
(I personally enjoy this with some low fat yogurt added, but that is a personal preference).
