Golden Austrian Cauliflower Cream Soup

Ingredients
1 head cauliflower, cut into florets3 carrots, chopped1 cup celery, coarsely chopped2 tbsp no-salt seasoning4 cup tomato juice6 cup water2 cloves garlic, minced or pressed1⁄2 tsp nutmeg3 cups baby spinach
Directions
Cover and simmer all ingredients, except spinach, for 15 minutes or until just tender.

Blend 2/3 of soup vegetables and liquid until smooth and creamy. Add back to the remaining chunky vegetables and stir in spinach. Spinach will wilt in hot soup.
