Shrimp& Rice with Orange & Mint

One 6 oz. package Farmhouse® Rice Pilaf1 Tablespoon fresh ginger, finely minced2 cloves garlic, minced1 cup sliced scallions1 Tablespoon orange zest1 Tablespoon butter or margarine1-1/2 cups water1/2 cup orange juice3/4 lb. raw, peeled, deveined shrimp1/4 cup half & half2 Tablespoons chopped fresh mint2 Tablespoons chopped fresh parsleySalt and black pepper to taste
1.In a large skillet sauté ginger, garlic, scallions and orange zest in butter until fragrant.
2.Add water, orange juice, rice and contents of seasoning packet; bring to a boil.
3.Reduce heat; cover and simmer 15 minutes.
4.Add shrimp and cook 5 minutes more or until liquid is absorbed and shrimp is cooked.
5.Stir in half & half, mint, parsley, salt and pepper to taste.
Serving Size: Makes about five 1 & 1/2 cup servings
