Ingredients

    16 ounces salmon fillets, cut into 4-ounce portions
    2 medium tomatoes, sliced
    1 cup mushrooms, sliced
    1 medium red bell pepper, cut in thin strips
    2 tablespoons prepared pesto
    lemon juice, to taste
    black pepper, to taste
    4 cups whole wheat spaghetti, cooked according to package directions

Tips

Drizzle with a bit of olive oil before serving, if desired, or sprinkle on a few chopped capers.


Directions

1. Preheat oven to 200C (400F). Spread out 4 large sheets of aluminium foil.
2. Place a salmon fillet in the center of each sheet. Spread 1/2 tablespoon pesto sauce on each fillet.
3. Divide the veggies into 4 equal portions and spread on and around fish.
4. Sprinkle freshly ground black pepper and lemon juice (to taste) over each fillet, and fold the aluminum foil closed to form 4 packages.
5. Bake for 15-20 minutes or until fish is done. Serve over cooked pasta.

    I did this a little different. I made the salmon in the pack with the pesto, lemon juice and pepper. I added the peppers, tomatoes, mushrooms and olive oil to the pasta. I sprinkled some feta on top of the pasta. It was fantastic. I will definitely make this again. - 3/11/09

    This is really good. They can be prepared ahead and frozen. Pull them from the freezer and cook as needed. Especially good for single servings. I add a tablespoon of medium salsa for even more flavor and that extra kick. ummmm. - 3/5/09

    This was easy, a whole meal in one package, filling and an easy clean up as stated by others. I threw it on the grill, served it over brown rice and sprinkled feta cheese crumbles on top. A total hit with the husband. I will make this again and again. - 3/14/07

    I loved this. I served with regular orzo instead of spaghetti. Don't forget to keep the foil open a wee bit, otherwise the moisture from the vege will create a puddle in the packet (though it is still delicious!) - 12/15/09

    This is a great tasting dish and easy to prepare. To increase the veggies, I added more mushrooms and some sliced zucchini to the blend. Yum! - 12/28/09
