Grilled Zucchini with Feta and Pesto

Ingredients
4 small zucchini (about 1 1/4 pounds), ends trimmed and sliced in half lengthwise1 tablespoon pesto2 tablespoons crumbled feta
Directions
Prepare a gas or charcoal grill to moderate heat.
Spray the zucchini with non-stick cooking spray. Place on grill cut side down, and grill for 4-5 minutes. Flip over, then spread on the pesto and cheese. Cook another 3-4 minutes, until cheese is starting to melt and pesto is warmed.

    To make the recipe match the picture: Cut each zucchini into 6-8 horizontal slices and grill each slice just 1-2 minutes per side until pliable. Remove from the grill and cool slightly. Place 1/2 to 1 teaspoon of filling on one end of each slice and roll up tightly; seal with picks if desired. - 7/9/12

    It is so frustrating to me that the pictures don't really go with the recipes on this site. You cannot achieve that look with this recipe, so then have to figure it out on your own. Aside from that dissapointment, the picture negatively impacts the actual recipe, which is a good one but not a match. - 6/18/12

    I have done this for years with summer squash as well, with a small amount of sliced cheese (provolone or swiss) melted, and fresh or dried dill on top. The family loves it! I'm so happy for another variation! - 8/2/11

    I tried this the other night with the following variations: I baked the zucchini in the oven at 350 with a spray of olive oil and salt and pepper until cooked thru. Then I spread on the pesto and sprinkled on grated swiss cheese instead and baked till melted. It rocked! - 7/12/12

    While this picture is 'pretty', it does NOT reflect the instructions for the recipe. We are real people, making real food.     thats a tiny amount of cheese and pesto for each zucchini half! 1/8 tbs of pesto and 1/4 tbs cheese? why not bump that up a little, a few more calories but addedd protein etc? Also, what is that a pic of? Cuz its certainly not this recipe! - 7/11/12
