Spicy Vegetable Wrap

Ingredients
4 10-inch tortillas, toasted over stove top 8 large lettuce leaves ¼ cup shredded carrots ¼ cup quinoa, prepared according to package and cooled 2 tablespoons sriracha 1 tablespoon extra virgin olive oil 1 tablespoon finely chopped green onion 2 tablespoons finely chopped cilantro 2 tablespoons finely chopped mint 2 tablespoons finely chopped parsley 1 teaspoon kosher salt 1 teaspoon freshly ground black pepper
Directions
In a mixing bowl, combine carrots, quinoa, sriracha, herbs and green onion.
Line tortillas with lettuce leaves and divide quinoa mixture among them.
Roll and serve.
