Eggplant Wonder Salad

Ingredients
One Eggplant - 1" chunks1 lemon EVOOPitted Green Olives'Capers
Directions
Cut eggplant (with skin) into 1" chunks
Saute in olive oil until golden brown but not more than 15 minutes - usually it's 7 - 10
Let eggplant drain on papertowels - sprinkle with some sea salt
Let cool a little before adding the juice of one lemon along with the zest of that lemon, add the capers and about 12 small green pitted olives.
Toss and mix and chill - serve cold. Wonderful!
