Ingredients
1 lb. 93% lean ground turkey1 onion chopped3 cloves of garlic, minced1 ea. 28 oz. can diced tomatoes1-1/4 c. water8 oz. tomato sauce1 tsp. italian seasoning1 tsp. basil1 tsp. oregano1 tsp. salt2-1/2 c. whole wheat lasagna noodles, broken into pieces1 c. cottage cheese, nonfat1/4 c. Kraft R.F. grated parmesan cheese1/4 c. Egg Beaters
Directions
In a large skillet, brown the ground turkey with the onion and garlic. Drain off the grease.

Add tomatoes, water, tomato sauce, italian seasoning, basil, oregano and salt. Stir in the uncooked pasta. Bring to a boil, stirring occasionally. Reduce heat, cover and simmer for 30 minutes or until the pasta is tender.

In a separate bowl combine the cottage cheese, parmesan cheese and Egg Beaters. Drop the mixture by tablespoons onto the pasta mixture. Cover and cook for 5-10 minutes more.

Makes 8 servings of 1-1/2 c. each

    Very good and very easy! I did make with ricotta cheese also and added just 1/4 cup lowfat shredded Mozarella cheese to the ricotta mixture. Satisfied my husband and 15 yr. old son. - 2/12/08

    Wow! SOOO good!! I'll definitely make this again. I used skim ricotta cheese instead of cottage cheese to make it a little more authentic and YUMM! Everyone loved it and it was very filling! - 2/4/08
