Whole Wheat Oatmeal Pancakes

Ingredients
1 1/4 cups whole wheat flour 2 teaspoons baking powder 1/4 teaspoon salt1 egg 1 cup milk, plus more if necessary1/2 cup unsweetened applesauce1/4 cinnamon1 tsp vanilla extract1/2 c oats
Directions
Mix dry and wet ingredients in two separate bowls. Slowly mix in dry ingredients into wet ingredients. On a skillet heated over medium-high heat, pour approximately 1/4 cup of the batter onto the skillet. Cook until bubbles begin to form on the outer edges of the pancake. Flip pancake and cook the other side until the bottom is golden brown.

    These are terrific! I love blueberries, and these are the easiest, yummiest, healthiest pancakes I've had in ages! I made them with non-fat milk, and since I didn't have any applesauce on hand I used a tablespoon of splenda, and they were delicious. Can't wait to try it again with applesauce. - 5/31/10
