Mediterranean Chick Peas Salad

Ingredients
2 cups of cooked Chick Peas2 Tbsp Olive OIl2 Tbsp Vinegar (or lemon juice)3 cloves Fresh Garlic, finely cut2 Tbsp Fresh Basil, finely cut1 Tbsp Fresh Parsley, finely cutSalt & Pepper to taste
Directions
Finely cut Basil Parsley and Garlic.

In a salad bowl, mix Chick Peas (cooked and cool down) with Olive Oil, Vinegar, Parsley, Basil and Garlic, Salt and Pepper.

Chill for 50 minutes. Bon Appetit! :-)

NB: Delicious in a Pita Bread - preferably whole wheat.

    This is so easy to make and very tasty! My two year old ate it and thought that the chick pea's were balls. HA ha! I recommend this as a salad that you can make when you're pressed for time and yet you want to serve something that is healthy and tasty. - 8/5/11

    This was SO EASY and fast to make. It tastes wonderful. I didn't have fresh garlic so I used powdered to taste. I only had dried parsley so I used that, I didn't have any basil so I had to leave that out. I added a little bit of sweetener (only a teeny scoop of stevia). Very delicious! - 3/7/08
