Whole Grain Waffles

Ingredients
2 large eggs2 Tbsp ground flax seed6 Tbsp water1/2 cup unsalted butter, melted1/2 cup applesauce3 1/2 cups milk2 Tbsp sugar4 cups whole wheat flour1/4 cup cornmeal2 Tbsp + 2 tsp baking powder1/2 tsp salt
Directions
Heat your waffle iron. Soak the ground flax in the water. Beat eggs until fluffy, add butter applesauce and milk. Add all the dry ingredients. Mix slightly then add the ground flax/water. Mix until no dry spots remain.

Pour about 2/3 cup of batter on hot waffle iron. Close iron and cook until done. Mine takes a little less than 3 minutes, but I'm sure it varies.

Serve as soon as possible!
