Eggs Florentine Pizza

For pizza:3 cups baby spinach1 clove garlic, minced1 teaspoon grated fresh ginger1 cup shredded mozzarella1 pizza crust (I used Betty Crocker's just add water mix)3 large eggs1 tablespoon chopped fresh chivesFor sauce:3 tablespoons reduced fat sour cream1 table spoon lemon juice1 tablespoon chopped fresh parsley
Preheat oven to 450. Bring a pot of water to boil and cook the spinach for one minute. Drain and squeeze dry with paper towels. IN a medium bowl, combine the spinach with garlic, ginger, and season with salt and pepper. Sprinkle mozzarella over prepared dough, then top with spinach mixture. Crack eggs onto pizza and bake for 7 to 10 minutes, or until edge of crust is golden brown.
While that is baking, whisk together the sauce ingredients until smooth. When the pizza is done, top with sauce and chives.
