Krab Salad (inspired by Taco Bell, with imitation crab)

Ingredients
8 oz imitation crab meat3 c iceberg lettuce (or bagged lettuce, carrots, etc are fine)1 med. cucumber, peeled, seeded and chopped1/2 c Sargento reduced fat sharp cheddar, shredded3-4 tblsp sliced black olives1 med tomato, chopped2 green onions, sliced, white part only4 tbsp Low fat or fat free ranch dressing (more on the side)
Directions
Cut up crab meat into small bit size pieces, process veggies as noted. Place everything in a bowl and toss. I like to serve with a whole wheat dinner roll.
