Easy Tomato Eggplant Pasta

Ingredients
8 oz Smart Taste Angel Hair Pasta1 can diced tomatoes with oregano, garlic and basil1 small eggplant peeled and diced2 tomatoes chopped1 clove garlic1 Tbl olive oil
Directions
Boil water for pasta.
Saute garlic and eggplant in olive oil for 5 minutes
Add can of tomatoes and chopped tomato
Bring to boil and then lower temp, cover and let simmer
Add pasta to water and cook al dente
When cooked, place in large bowl and toss with sauce.
Serve with grated parmesan reggiano.
