    1 cups zucchini, grated
    1 egg
    1/4 yellow onion, diced
    1/4 cup cheese (cheddar or Parmesan work the best)
    1/4 cup bread crumbs - I used Italian style
    Salt and Pepper


1. Preheat oven to 400F. Spray a 24 ct. mini-muffin tin with non-stick spray, set aside.
2. Grate the zucchini and then place in a dish towel to squeeze out the excess water- like when using frozen spinach; if you skip this part, the middle of the zucchini tots will be really soggy while the outside gets crispy and no one wants that.
3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
4. Using a spoon or a cookie scoop, fill the muffin cups to the top. Bake for 10-15 minutes, or until the top is browned and set.

    These are amazing. Garlic is a must add if you like it. I made them in regular muffin tins and they taste like tots/crisp hash brown casserole. I don't miss potatoes or pasta using zucchini- yum - 7/15/14

  • Haven't eaten them yet. In the oven now but it filled only ten in my mini muffin pan. How many cups of zucchini? The recipe says 1 cups. Does the plural mean more than one or was that a typo? - 7/22/15

  • These are fabulous! I used garlic powder in addition to the grated onion for more flavor. I also made them gluten free by using cornmeal in place of the bread crumbs. I am making them as part of Mother's Day brunch tomorrow and will use gluten-free bread crumbs. Easy, delicious, great! - 5/10/14

  • These were yummy, though it only filled the 24 mini muffin tins half way. Next time I will measure the zucchini after squeezing. Also, I will add a little garlic salt as someone else mentioned. - 10/20/12

  • Yummy! I did something different in cooking them, this was due to a power outage, instead of in the oven for 10 - 15 minutes I did them on the gas grill at 400 for only 10 minutes. I never had made them before, but they were the rave of the dinner. I will have to try in the oven next time. :) - 8/6/12
