Veggie mix for tostadas

3 cups chopped tomato 1cup onion 4cups corn3 cups peas 6-10 red potatoes diced1jalapeno 6garlic cloves1 can tomato sauce
cook diced potato seperately in water first
saute onion
blend tomato garlic tomamo suce and pepper add to onion
add vegetables simmer 10 -15 then add potato and season as desired.
I made this to top tostadas. To prepare tostadas first layer mashed pinto beans on tostadas then add a layer of half cup of the veggie mix and the optional topings are shredded lettuce diced tomatoes crumbled queso fresco sour cream and your favorite hot sauce.
Or use as a filling for tamales, empanadas or enjoy with rice or as is.
