French Onion Soup

4 cups onions, thinly sliced 2 T. garlic, pressed or minced 2 tablespoons all-purpose flour 2 (10.5 ounce) cans beef broth, or water and beef boullion¼ c. butter ¼ c. white wine or vermouth, optional but adds distinct flavor. Has been added for nutritional value.2 T. Worcestershire sauce1 T. parsley½ t. salt1 tsp. black pepper or more to taste2 1/2 cups water Caesar (or garlic) croutons, generous handful per serving8 Fresh mozzarella slices, generously topped per bowl
Separate sliced onion into single rings. In a medium sauce pan saute onions and garlic in butter until soft, approximately 20 minutes. Stir in flour and gradually add broth and water and rest of ingredients. Bring to a boil and simmer for 20 minutes. Place Croutons into soup bowls. Pour soup mixture over croutons, and top with sliced mozzarella. Broil in heat safe bowls until mozzarella is bubbly and lightly browned. Makes 8 servings.
