Black Bean & Mushroom Patties

Ingredients
2 tbsp sesame oil 3 cups fresh, sliced mushrooms 1 medium onion, chopped 1 clove garlic, minced ½ tsp fresh rosemary ¼ tsp each salt and pepper 1 can black beans, drained and rinsed½ cup applesauce¼ cup finely chopped fresh tomatoes¼ cup stone ground oats ¼ tsp minced fresh parsley
Directions
Makes 4 servings

In skillet, heat 1 tbsp of the oil over medium-high heat. Sauté mushrooms, onion, garlic, salt and pepper until liquid is evaporated, approx. 5 minutes. Scrape into food processor. Add beans; pulse to combine. Mix in applesauce, tomatoes, oats, rosemary and parsley. With wet hands, form into four 1/2-inch thick patties. In same skillet, heat remaining oil over medium heat; fry patties, turning once, until hot and crusty, approximately 8 minutes.
