Pumpkin Soup

Ingredients
1/4 c butter1 c chopped onion1 crushed garlic clove1 tsp. curry powder1/2 tsp. salt1/8 tsp. crushed red pepper3 c (16 oz. can) solid pack pumpkin1 c. half and halfsour cream and chives to top (optional - not included in calorie calculation)
Directions
In a large saucepan, melt butter, saute onion and garlic until soft. Add curry powder, salt and crushed red pepper; cook 1 minute. Add broth, boil gently, uncovered 15-20 minutes. Stir in pumpkin and half and half; cook 5 minutes. Pour into blender container, cover and blend until creamy. Serve with garnish of sour cream and chives if desired (not included in calorie calculation). 1 serving=1 cup but would suggest making at least 2 cups per person.
