Summer Salad

Ingredients
1 small red onion, sliced thinly5 medium tomatoes cut in wedges1 cucumber, peeled if thick skinned, cut in half and then sliced 1/4 inch thick1 yellow pepper, cut into chunks2 oz feta, crumbled2 oz fresh pecorino, cubedFresh ground pepper6 tablespoons extra virgin olive oil2 tablespoons red wine vinegar2 tablespoons of chopped fresh mint and oregano12 Kalamata olives
Directions
Toss together the onion, tomatoes, cucumber, and bell pepper. Add the cheese and toss again. Add the oil, the vinegar, the herbs, and toss again. Taste, and add the olives. Serve.
