Barley and Chicken Salad

Ingredients
2/3 cup uncooked quick cooking barley1 1/2 cups (6 oz) coarsley chopped cooked boneless skinless chicken breast3/4 cup seedless red grapes, cut in half2 tbsp toasted chopped walnuts2 tbsp lemon juice1 tbsp orange juice1 tbsp extra virgin olive oil1/4 tsp salt sense1/8 tsp coarsely ground black pepper3 tbsp finely chopped fresh parsley
Directions
1. Cook barley according to pkg directions omitting any salt or fat. Transfer to large bowl; cool to lukewarm.

2. Combine cooled barley, chicken, grapes and walnuts. Whisk together juices, oil, salt and pepper in small bowl. Pour over salad; sprinkle with parsley; toss gently
