Spinach Fritatta

Ingredients
Directions
1 c. chopped green peppers1 c. chopped onion10 oz frozen spinach1 small carton Egg Beaters1 small carton Egg Beaters Whites4 oz part-skim shredded mozzarella, divided
Saute peppers and onions until tender.
Add spinach and saute until all tender and heated through.
Place in non-stick baking pan (7x10 was used).
Sprinkle 1/2 cheese on filling.
Pour egg substitute over top.
Bake ~30 minutes at 350.
Add rest of cheese to top.
Bake until melted and browned and knife inserted comes out clean.
Serving Size: Makes 6-12 servings
