Mystery Zucchini Ratatouille

Ingredients
Zucchini, 2 cup, slicedSummer Squash, 2 cup, slicedOnions, raw, 1 smallSpinach, fresh, 1 cupWhole Foods Fire Roasted Salsa Verde - 30 grams, 2 tbspSalt, 1 tspPaprika, 1 tsp*Extra Virgin Olive Oil, 1 tbsp
Directions
Toss ingredients into a bowl. Mix everything together to get the oil and salsa evenly distributed. Pour the medley into a dutch oven and simmer. Serve over jasmine rice, with more sea salt. Add light dusting of paprika for additional color and flavor.
