Ingredients
two large ripe tomatoessmall summer squashsmall zucchinimedium onion (i use red)large clove of garlic4 tbs butter tbsp basiltbsp oregano1/2 tsp salt1/2 tsp peppertbsp thyme sprinkle with parmigiana oreggiano cheese if desired.
Directions
boil the tomatoes then cool and peel skin. mash them and add all seasonings. cut up the squash zucchini and onion. heat a skillet and add butter, cook the onion till soft then add to tomato sauce. Then cook the zucchini and squash to desired tenderness. Add them to the tomato sauce and simmer for 25 mins. Serve over brown rice or whole wheat pasta with grilled or baked chicken.
