Spaghetti Squash Carbonara

Ingredients
1 whole Summer Squash, halved and deseeded8-10 Strips of Turkey Bacon 3 Eggs1/2 cup of Milk, nonfat1/2 cup Chicken or Vegetable Broth4 tbsp. Parmesan Cheese, reduced fat preferably1 tsp garlic powder1/4 tsp Oregano, ground 1/2 Salt
Directions
Cut spaghetti squash in half, deseed, and place face down in microwavable dish (appx. 2-3 inch deep.) Pour 1/2 cup of broth in the bottom of dish. Microwave on high for 10-12 minutes. Use spoon to scrap out flesh from the skin of each squash half into a bowl, pour excess liquid over flesh, set aside.

Whisk together eggs and 1/2 milk until frothy. Add cheese. Add , garlic powder and salt.

Cut turkey bacon into 1/2 inch pieces. Saute for 3-5 minutes in a large pot on medium heat until crispy. Add spaghetti squash. Pour egg mixture into pot. Cook eggs in squash/bacon mixture for 7-8 minutes or until it turns very thick and eggs are cooked. Serves 4, generously for dinner or a side dish.

    A little long in prep (15 minutes did not cut it since the squash has to cook first), but I really liked it and it is different from the usual red sauce. I will do it again. - 11/10/15
