2- 4.5 inch yellow or white corn tortillas2- Panko crusted tilapia filets from Costco1/2 a cup of shredded red or greed cabbage (or both mixed)1/4 of a medium tomato - dicedWedge of fresh lime, lime juice or lemon juiceDressing: depending on how much you want to make the amount of each ingredient will vary. I make 1-2 cups at a time so it is less of a hassle to put the tacos together. Your finished product should look something like thousand island dressing. You can add more of each ingredient if it doesn't look right, or taste right. You can also add a tiny bit of vinegar if you like that kind of flavor.
Heat oven to 400 degrees. Place frozen fish in a baking dish or cookie sheet (no preheating required.) Cook for 13 minutes, then flip them to the other side and cook another 13 minutes. Heat a small amount of oil in a nonstick skillet and lightly cook two corn tortillas until they are soft and lightly browned. Shred cabbage, and dice tomato. Combine cabbage and tomato in a bowl, then sprinkle with lime juice. In a separate container, mix mayonnaise, relish and ketchup. Mix should be the color of 1000 island dressing. Place the baked fish filet on the center of the tortilla, place half the cabbage & tomato mix on each taco, and top with the dressing mix. You can also use red cabbage, add fresh cilantro or more/less lime and dressing.
