Canellini bean salad

Ingredients
1 cup canellini beans1.5 tbs olive oil1 tsp rosemary3 garlic cloves1 tomato1 tsp parsleysalt & pepper to taste
Directions
Saute garlic and rosemary in olive oil. Turn off heat and let stand for 20 minutes to infuse flavors into the oil.

Open a can of canellini beans, strain and rinse. Dice the tomatoes and add to the beans.

When the oil is cooled, remove the rosemary, add the lemon juice, salt and pepper and blend in a blender to make a smooth dressing. Pour over the beans and tomato. Toss with parsley, salt & pepper. Chill & serve.
