Curried Kale with Sauteed Apple and Onion

Ingredients
1 Medium Granny Smith Apple1 Tablespoon Coconut Oil1 Medium Onion1 Teaspoon Curry Powder2 Pounds Kale1 Cup Water1 Teaspoon Soy Sauce
Directions
Heat Coconut Oil in a large saucepan over medium high heat until hot but not smoking. Saute chopped onion, stirring occasionally until golden. Add apple and curry powder and saute stirring until apple is almost tender, about 2 minutes.
Add kale and water and cook ocvered stirring occasionalkky until kale is tender and most of liquid is evaporated, about 5 minutes.
Drizzle with soy sauce and toss to coat evenly.
