Mini Coffee Cakes

Ingredients
1/3 cup butter, softened1/4 cup sugar1 egg1-1/2 cups all-purpose flour1 package (3.4 ounces) instant vanilla pudding mix1 tablespoon baking powder1/4 teaspoon salt1-1/4 cups milk1/2 cup chopped walnutsTopping:1/2 cup chopped walnuts1/3 cup packed brown sugar2 tablespoons butter, melted1/4 teaspoon ground cinnamon
Directions
In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, pudding mix, baking powder and salt; gradually add to the creamed mixture alternately with milk, beating well after each addition. Stir in walnuts.

Fill paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter. Bake at 375° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack.
