Ground Beef, Zuchinni & Stuffing Casserole

1-1/2 lb. Extra Lean Ground Beef1 Pkg. Stovetop Stuffing, Chicken, Low Sodium1 Cup Carrots, grated3 cups Zuchini, thin sliced1 Onion, medium, chopped1 cup Sour Cream, Light1 can Cream of Chicken Soup 98% Fat Free
Boil zuchini and onions for 5 minutes. Drain. Mix zuchini and onions with sour cream, soup, and carrots.
Make the stuffing as directed on box.
Spray a casserole dish with olive oil spray. Layer 1/2 beef, 1/2 stuffing. Put all zuchini mixture. Layer remaining beef and top with stuffing.
Bake at 375 degrees for 45 minutes.
