1/c cup red lentils, washed1/4 cup brown rice, washed1/6 cup wild rice, washed2.5 cups water2.5 cups chicken broth, Simply Knorr1 cup onions, chopped1.5 cup celery thinly sliced2 cups carrots, chopped2 cloves garlic, crushed1.5 cups canned tomatoes, blended
1. Wash lentils, brown and wild rice. Cover with water and chicken broth and bay leaves. Bring to boil, turn heat down and boil gently for 50 minutes.
2. Saute onions, celery and garlic in pan until onion are clear but not browned. Add to soup.
3. After lentils and rice are cooked, add carrots, thyme, and blended tomatoes. Bring to boil and cook for another 25 minutes. Add parsley and cook for an additional 5 minutes. Add salt, pepper or other spices of your choice.
