Ingredients
salt8oz.snow peas,trimmed8oz. snap peas,trimmed10 oz. fresh Enlish peas1.5c. thinly slices radishes{about 9 med. }4oz. soft goat cheese,crumbleddressing:1 tsp.lemon zest2 tbsp. lemom juice1tsp.dijon mustard1tbsp.chopped fresh tarragon.75c.olive oilsalt and pepper
Directions
make salad: Bring a large pot of salted water to a boil.Add all peas and blanch foe 3min ,Drain and plunge into a large bowl of ice water ,when peas are cold ,Drain and pat dry. Place in large bowl with radishes.
2 .Making dressing :In a small bowl whisk together lemon zest and juice,mustard ,tarragon and olive oil until well combined:season with salt and pepper.Pour over salad and toss well. Sprinkle with goat cheese.
