Mini Frittata's

Ingredients
6 large eggs, beaten1/2 cup marscapone4 oz Canadian bacon, chopped1/2 large tomato chopped1 green onion chopped1/2 small avocado chopped1/2 fresh mushrooms chopped 1/2 ounce shredded mozzarella cheese
Directions
Preheat oven to 350 degrees.

Mix all ingredients together, add salt and pepper to taste.
Pour batter into mini muffin pan sprayed with cooking spray.
Sprinkle each frittata with shredded mozzarella.
Bake for 10-15 minutes until eggs are set and top is golden brown.

    Doucette6- I made this originally as 1 big fritatta and it was great, I make it in mini form now because I just store them in the fridge for a quick breakfast all week long
