Italian Berry Pie

1 9” pie crust, unbaked1 cup light ricotta cheese2 egg replacers, prepared3 tbsp sugar1 tsp vanilla extract1 cup unsweetened frozen blueberries, thawed1 cup raspberries, washed and picked over
Preheat oven to 350ºF.
Place ricotta cheese in bowl of a food processor; process until smooth and creamy.
Add egg replacers, sugar, and vanilla; process again until well combined.
Spoon filling into pie crust, and bake about 45 minutes.
Cool pie, arrange berries on top.
