Egg, fresh, 4 large (remove)*Pearl Tapioca, 1 cup (remove)Vanilla Extract, 1 tsp (remove)Granulated Sugar, 2 cup (remove)Milk, 1%, 12 cup (remove)
Mix sugar, tapioca, milk and egg in large pot. Let stand 30 min.
Cook on medium heat stirring constantly, until mixture comes to FULL BOIL (a boil that doesn't stop bubbling when stirring). (Pudding thickens as it cools.) Remove from heat. Stir in vanilla. Cool 1 hour, stirring periodically. Serve warm or cool. I often add flaked coconut and 1 tsp of coconut extract.
