Black Beans & Rice

Ingredients
1/2 tsp olive oil3/8 onion, chopped3/4 garlic clove, minced1/4 cup plus 2 tsp uncooked white rice1/2 cup plus low fat vegetable broth1/2 tsp ground cumin1/8 tsp cayenne pepper1 can black beans, drained and rinsed
Directions
1. In a stockpot over medium-high heat, heat oil. Add onion and garlic. Saute for 4 minutes. Add rice and saute for 2 minutes.

2. Add vegetable broth, bring to a boil, cover and lower the heat. Cook for 20 minutes. Stir in spices and black beans.
